Cooking Club: Cream Sauce with Sausage and Peas

All right, here comes another month of recipes. Are you ready? I know several people actually tried last month's recipes and that makes me so happy! I will be posting the reviews of the recipes on Tuesday (along with the winner to my giveaway).

So here is my recipe for March. I actually found this recipe while looking for a February recipe and really liked this one too, it is simple, fast and my kids like it!!!

Cream Sauce With Sausage and Peas
Created by Cindy Szerlip who submitted it to Cook's Country

1 pound hot or mild Italian sausage, casings removed and meat crumbled
1 T. olive oil
1/2 med onion, chopped fine
1 garlic clove, minced
1/2 t. red pepper flakes
1/3 cup white wine (I just skipped this step)
3/4 cup low-sodium chicken broth
1 cup plus 2 T. heavy cream
2 cups fresh or frozen peas
1/2 cup finely grated Parmesan cheese
Salt and pepper

1 lb pasta of choice-I used bow tie, cooked according to directions

1. Brown sausage in large skillet, over medium heat, 6 to 8 minutes. Using slotted spoon, transfer sausage to plate lined with paper towels. Pour off grease in pan. Add oil and leave over medium heat until shimmering.

2. Add onion and cook until softened, 3 to 5 minutes. Add garlic and pepper flakes and cook until fragrant, about 30 seconds. Add wine and simmer until almost evaporated, 1 to 3 minutes. Add broth, and 1 cup cream; simmer until sauce reaches consistency of light cream, 6 to 9 minutes. Stir in peas and sausage and cook until flavors meld, about 2 mins. (maybe a min longer if peas frozen) Remove from heat, stir in cheese, and season with salt and pepper.

3. Toss sauce and remaining 2 tablespoons cream with cooked pasta and serve.

Happy Cooking! You can find the past recipes here. And as always, if you make the recipes, email me or leave a comment under the recipe and I will feature your blog during the reviews.

  1. This looks really good. I am printing the recipe right now...

  2. That sounds and looks good even with the peas. I am not a fan of peas, but cooked in other things they are OK. My hubs loves them though so this would be a great recipe for us to try. Thanks for sharing.

  3. Can't wait to try this. I bet it will be a hit for all of us! Yum!

  4. Looks tasty, but my kids rarely eat peas when I put them in with things. :(
Hey, are you going to find something fun for St. Patty's day?
I would love to find a really good recipe that would be a fun Irish meal, any suggestions?

  5. I think I could make this one...some people would just have to pick the peas out. Not me. haha.

  6. Yum. I know this is weird, but I love anything with peas!

  7. Yum! I never would have thought of the italian sausage.

  8. We love pasta, I'm going to have to try this one!

  9. That looks really good! I love peas. I put thawed, frozen peas into my salads. My two year old eats them still frozen. Her weirdness must be genetic.

  10. I seriously have ground sweet sausage on the counter defrosting right now and no clue what I was going to make with it. YAY! You solved my problem- thanks for sharing the recipe :)

  11. I am totally making this for dinner tonight. Peas and all. I came visiting from another blog that had a link to your recipe. I'm glad I did. This looks amazing. Thank you.

  12. Happy SITS Day! Yummy recipe, gonna share it with my BFFs. Thanks!
