Cooking Club: Chicken, Avocado and Provolone Wraps

Happy Saturday! We are on week number two for the November recipes. This is the one I picked. I picked this one as I thought not only would it be a good dinner option but it would be great for lunch. And lets face it, I hate lunch. I can never think what to make for lunch and feel like we eat the same old things. The picture is from Rachel, thanks once again for the beautiful picture.

Chicken, Avocado and Provolone Wraps

Ingredients

  • 2 cups shredded or chopped cooked chicken
  • 1/2 cup chopped tomato
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon hot pepper sauce
  • 1 ripe avocado, peeled, pitted, diced
  • 4 slices Provolone Cheese
  • 4 (8 inch) low sodium flour tortillas
  • 4 leaves red leaf or boston lettuce

Directions

  1. Combine chicken, tomato, cilantro and hot sauce in a medium bowl; toss well. Add avocado; toss again.
  2. Arrange cheese over tortillas; top with lettuce leaves and chicken mixture. Roll up; cut diagonally in half.

  2. Those look great! The only thing is that I'd have to hold the avacado. ;)
