Cooking Club: Southwest Turkey Burgers with Corn Salsa

Here is the final recipe for this month and It is a good one. It was submitted by Raelynn and my whole family, kids included liked this one, though I didn't put the salsa on the kids. Oh, and we ate ours on whole wheat buns with a dollop of sour cream.

Southwest Turkey Burgers with Corn Salsa
from Bon Appetite

INGREDIENTS

1 1/2 pounds ground turkey (I used one lb and just decreased everything else a bit)
1/2 cup finely crushed tortilla chips (crushed in resealable plastic bag with mallet)
6 tablespoons chopped fresh cilantro
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon ground black pepper

1 cup purchased chunky salsa
1/3 cup fresh corn kernels

PREPARATION

Combine turkey, crushed chips, 4 tablespoons cilantro, chili powder, salt, cumin, and pepper in large bowl. Using fork, mix together.
Form 6 patties, each about 3 1/2 inches in diameter.
Mix together salsa, corn, and remaining 2 tablespoons cilantro in small bowl. Set aside.
Grill burgers until cooked through, about 5 minutes per side. Divide among plates. Spoon salsa over burgers and serve.

SERVE WITH ANY OF THESE

Black Beans
Jack Cheese
Sour Cream
Buns

NOTES from Raelynn:
I used flavored tortilla chips (salsa verde Trader Joes tortilla chips) to give it more flavor, and yes it did have flavor. The possibilities are endless with this!

Several of the reviewers on the website suggest reducing the amount of chili powder by 3/4 or 1/2 since they felt it was overpowering.

Lots of reviewers also suggest trying these with guacamole, also.

I did not use buns, but plated 2 burgers each for Sam and I with lots of my tomato, corn concoction on top and spilling over the plate.

  4. Normally, I love your food suggestions and recipes. But the words "turkey" and "burger" do not belong together. I think I'd have to completely smother the thing with salsa to eat it.

  5. That looks delicious. It will also feed even my food allergy child, so I am most definitley going to try this one. Of course, we are from Texas, we could eat Mexican food seven days a week.
